* Umami is one of the five basic flavors, along with salt, sweet, sour and bitter.
This flavor was discovered in 1908 by Japanese Kikunae Ikeda, a chemistry professor at a Tokyo university. Umami is therefore originally a Japanese word for deliciousness or savory.

The taste of spinach, tomatoes or fish, for example, can be referred to as umami.

Province: Kagoshima

Kagoshima is located at the southernmost tip of Japan, and unlike China, Japan produces almost exclusively green tea. To get a green tea, it is important to prevent the leaves from oxidizing after harvest. Oxidation means to turn brown under the influence of oxygen. In China, oxidation of the tea is prevented by heating the tea in a wok. In Japan, they do this by steaming the green teas. The Fukamushicha is a deeply steamed green tea. This means that the tea is steamed longer than regular resulting in a fuller rich umami flavor.

The other teas also come from Japan. The spices come from various other countries.

What makes this Fukamushicha so special is that you can not only drink this tea but also eat it.

Not surprisingly, this Japanese Fukamushicha is delicious both hot and cold* to drink with Japanese sashimi and sushi dishes. After pouring the tea several times, then add some soy and puffed rice to the tea leaves and surprise guests with this delicious side dish.

This Genmaicha Matcha Satsuki, or green tea with matcha and puffed rice already has a unique flavor on its own, but paired with sashimi of salmon and tuna, it is even more delicious. They have a flavor-enhancing effect on each other, giving this delicious tea a velvety smooth taste.
